Description

We are looking for a humectant which is as effective as glycerol or more to control the water activity of oil/water emulsions.  It should ideally be tasteless, colourless and give the same textural properties as glycerol.

Background

With an increase in the well-being awareness of our consumers, we would like to be able to offer low-sugar fillings, ideally as an emulsion.  For this to succeed the water activity needs to be controlled adequately to ensure food safety during shelf-life.
