Novel ingredients for creating high-protein snacks

We are looking to identify innovative ingredients with which we can develop protein enriched snacks. These high-protein snacks should be able to deliver desirable nutritional benefits while achieving premium sensorial quality and meeting margin expectations.


The high-protein snack trend predicted to continue to be a significant global business opportunity but current technical solutions do not meet consumer quality expectations for Mondelēz International branded products and/or Mondelēz International margin expectations.

Key Success Criteria
  • Food grade (microbiological & toxins)
  • Suitable for vegetarians
  • Neutral flavour
  • Ingredients must shelf-stable for at least 3 months
  • Ingredients should have at least 85% protein content in dry matter
Possible Approaches
  • Protein extraction/purification modification technologies
  • Technologies that are currently used in dairy protein production, that could be applied for use with plant-derived protein.
  • Side streams from existing processes that aren't currently utilised.
What We Aren't Interested In
  • Commercially available ingredient systems from large vendors.
  • The use of masking flavours to address taste issues with current solutions.
  • Algae sources
